EZ Grilled Chicken Bruschetta
Servings: 4
Ingredients:
3 medium vine ripened tomatoes
¼ cup chopped red onion
2 tbsp. fresh basil leaves, chopped
1 tbsp. extra virgin olive oil
1 tbsp. balsamic vinegar
Salt and pepper, to taste
3 oz. part skim mozzarella cheese,
diced
1 ¼ lbs. chicken cutlets, grilled
Instructions:
1.
Chop tomatoes and
place in a large bowl. Combine with
garlic, basil, onion-balsamic combo and add additional salt and pepper to
taste. Set aside and let it sit at least
10 minutes (or as long as overnight for a stronger flavor). Toss in the cheese when ready to serve.
2.
Top grilled chicken
with bruschetta mixture and enjoy!
