Yam & Apple Bake
4-5 Yams
5-6 Apples
Add a couple of inches of water* in the bottom of a pot and bring to a boil turn down to medium and add yams cover with lid and cook for 45 minutes. (Also try roasting the sweet potatoes in the oven for an even better flavor, or bake foil wrapped or unwrapped on a cookie sheet cause they drip juices).
Peel, slice and precook apples for 10-15 minutes in a pot with a couple of inches of water* in the bottom of a pot and bring to boil turn down to medium low add apples cover with lid and cook for 10-15 minutes.
Add precook yams then peel, slice, and layer them with peeled cored and sliced fresh apples. Alternate in rows and cover with sauce.
Sauce:
2/3 cup water* (use the water used to boil yams and apples for this)
1/2 c. brown sugar
1/4 c. butter
1/4 t. salt
2 T cornstarch
Boil and add 1 T juice from one lemon, pour over yams and apples.
Bake 45 minutes at 350' F.
Note* (2 Tbsp flour per 1 cup liquid for gravy) (1 Tbsp. cornstarch per 1 cup liquid)
