Banana Pudding

Banana Pudding 


Vanilla Pudding or Pie Filling ( I almost always double this recipe)

2 c. milk
1/4 c. sugar
1/3 c. flour
1/4 t. salt
Blend till smooth.  Pour into non-stick pot.  Cook till thickened stirring constantly.

Separate 2 eggs. Place yolks in blender after the mixture thickens, turn blender on very low and pour hot mixture into blender with the eggs.  Pour mix back into pot and cook for 2 minutes on low.  Then stir in:

2 Tbsp. butter
1 t. vanilla

Meanwhile beat egg whites to soft peak stage adding 1/4 c. sugar

Gently fold in the whites to the cooked pudding.

Let cool
Then layer
Vanilla wafers, pudding, sliced bananas, and cool whip.
Triffle dish
