German Pancake

6 eggs
1 c. milk (2%)
1 c. flour*
1/2 t. salt
2 T. butter, melted

In blender combine eggs, milk, flour and salt. Cover and process until smooth.

Pour the butter into ungreased 9x13 baking dish, add the batter.
Bake uncovered at 400' for 20 minutes. Serve immediately with syrup.
Makes 8 srg.

Buttermilk Syrup
1-1/2 c. sugar
3/4 c. buttermilk
1/2 c. butter
2 T. corn syrup
1 t. baking soda
2 t. vanilla extract
(Dust with confectioner's sugar)

In saucepan combine first five ingredients bring to a boil.  Boil for 7 minutes.  Remove from heat, stir in vanilla.  Dust with confectioners sugar. 

Makes 2 cups of syrup

*Try to eliminate some of flour and substitute some cornstarch to make it lighter in texture.
