1 c. oatmeal (try rice cereal)
2/3 c. coconut flakes, toasted
1/2 c. peanut butter (almond butter, sunflower seed butter)
1/2 c. ground flaxseeds or wheat germ (1/4c. flax and or 1/4 c. wheat germ)
1/2 c. chocolate chips (optional) (chopped dried fruit-apricot, dates, raisins, cranberries, cherries or chopped nuts-almonds, pecans, walnuts, sunflower seeds)
1/3 c. honey (not agave nectar cause may not hold together)
1 tsp. vanilla
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled roll into balls or whatever size you would like (ex. 1" diameter) Store in airtight container and keep refrigerated for up to 1 week.
Makes 20-25 balls
